The Olde Thyme Whey started with a simple question: what happens when you treat whey — that humble byproduct of cheesemaking — with the same reverence baristas give single-origin beans?
The answer is a flavor profile you can't fake. Our house-fermented whey syrups develop complex, tangy-sweet notes over weeks of patient culturing. We partner with local dairies, source our coffee from roasters who know their farmers by name, and pour every drink the way we'd want it poured at our own kitchen table.
